Why when your about to update your ipod it says deletes cache?

so im about to update my ipod & it says its going to delete cachee? what does thaat meaan? & it reduces the cache & no longer backs the cache on itunes? i Put next & it gives me the software license agreement? should i Just put agree? it wouldnt erasee anything?
